Sweet Potato Pumpkin Soup

This sweet, creamy, delicious and nutritious soup is easy to make.  The toasted almond which, lend a bit of crunch and an additional layer of nutty flavour to this creamy soup. Best of all, the ingredients are already in your pantry!

 

 

 

Sweet Potato Pumpkin Soup

Ingredients
  • 2 cups pumpkin, sliced in chunks
  • 1  large sweet potato, sliced in chunks
  • 1  large carrot, sliced in chunks
  • 2  onions, chopped
  • 1 cup chopped tomatoes
  • 4 cloves garlic, chopped
  • 1/2 tsp. paprika
  • 1 tsp  Salt
  • 1 tsp  Black pepper
Garnish
  • 1 tbs   toasted almonds optional
  • 1 tbs chopped chives optional
Instructions
  1. In a stock pot, add oil, onion, garlic, black pepper and salt. Stir in tomato and paprika and saute for another two minutes.

  2. Add water, sweet potato, pumpkin and carrot. Cook until veggies are tender.

  3. Use an immersion blender to puree soup.

  4. Garnish with chives and toasted almond nuts.

  5. Enjoy!

Recipe Notes

You can use chopped cilantro instead of chives.

You can also use pumpkin seeds instead of sliced almonds.
